question regarding acetylation


some recipes call for pyridine in addition to AA. Could one just use excess AA, and wait longer, or is there any alternative.

Pyridine is a nucleophilic catalyst. Imidazole might be a substitute. DMAP is a classic but likely harder to obtain than pyridine itself.
