I prefer to use domestically available chemicals only, for the challenge. If you buy sulfuric acid or acetic acid from the internet, you might as well
buy any chemical you want, for the hell of it... buy a bottle of some random chemical, just to put it on a shelf and collect it.
which is more fun? ordering a jug of methyl salicylate from amazon, or making it only from stuff you can buy at walmart?

Depends entirely on what your objectives are...
Many times I have made a chemical once myself and then for future needs just bought it.

wouldn’t copper oxide be cheaper to use that sodium hydroxide while neutralizing the vinegar?
copper acetate is easier to dehydrate that the sodium salt
and concentrated sulfuric acid can react with it to make glacial acetic acid
the side product copper sulfate can be easily electrolyzed back to sulfuric acid and with high enough current powdered copper that gets easily
oxidized in air

Where I live, copper oxide is way more expensive than baking soda (NaHCO3), NaOH, or sodium carbonate. If by "cheaper" you mean that you
can use the copper oxide in a cycle "dissolution in hot vinegar>crystalization>dehydration>reaction with sulfuric
acid>electrolysis>dissolution in hot vinegar", I gotta admit it looks quite good.

If you make Sodium acetate you need to dehydrate it by heating(melt) before making GAA with it.
