Glucose/Sucrose to carbon..
Let Say we take 1 mole of glucose/Sucrose, then heat it up to 800 degree Celsius,
Case-1 (Inert 95%Ar-5%H2 atmosphere)
Case-2 (Air atmosphere)
Case-3 (N2 atmosphere)
then what reactions will happen in all those cases,
and what will be the carbon content we will get in the final product in each case.

I wouldn't expect you to try that for yourself. Few people have all those gasses and a reaction chamber capable of 800C on hand.
It appears to be a question for pedagogical purposes rather than mere musing on your part. So perhaps a bit of advice will aid you in arriving at a
hypothesis.
Consider how the 3 gas mixtures vary in their reactivity. Are they inert? Or oxidizing? Or reducing in nature?
Posit to yourself what reactions may be possible with sugar in each atmosphere at high temperatures.
Check to see if these reactions will occur at the temperature in question.
Finally, check to see if the products you think you'll get will further react with the atmosphere in question at those high temperatures.
