Chevreul's Salt from Copper Acetate

I'm interested in making a sample of chevreul's salt but I'm low on copper sulfate and have a lot of copper acetate left over from a previous experiment and SMB. Would this work or would a different reaction occur?

Yes it should work sodium metabisulfite forms the salt immediately then sodium acetate forms
