Slighty off topic, but if you're at it anyway: Birefringence of tri glycine di-sulfate is also cool. glycine sulfate is easy to grow into big crystals.

In the inorganic realm, you could try hexamolybdato manganese. Just the addition of ammoniumparamolybdate to a solution of an Mn2+ salt will do.
Some crystals will appear yellow and some red under polarised light, depending on orientation.
