i do hope that this is the right board i pose this question - otherwhise, my apologies to this.
I am looking for the chemical compound of "Safran" which colors yellow to orange. I still could not find any hints about the name of the compound that
causes this color.
Does anyone of you know about it or has a website or pdf.document about it ?
However, saffron's golden yellow-orange colour is primarily the result of α-crocin. This crocin is trans-crocetin di-(β-D-gentiobiosyl)
ester (systematic (IUPAC) name: 8,8-diapo-8,8-carotenoic acid).
Crocin - that's it ... the most close solution (wikipedia) seems to be the best solution
