extraction? It still looks like it may be a cost-effective method of obtaining elemental iodine.

yes, I think that would work. Iodide is really easy to oxidize to free iodine from solution.
I suppose adding something like lead (ii) for example would also precipitate the insoluble metallic iodide salts as well.
If this is possible its a great source of cheap iodine.
Ive calculated that 80.4% of the molar mass is iodine. from 400 gram of stuff you could in theory recover 321 g Iodine.........quite a bit for not
much money.

You must also keep in mind that this is not the pure compound, I would expect it to be like 4-8% by weigth.

But yes, in general when you buy it you're not getting anything like 100% EDDI. Even so I believe this compares favorably to many other proposed
sources.
