I was wondering if compound like trimethoxyaluminium can be made, or it would be too unstable.

I have made triisopropylaluminium and it is not pyrophoric or particularly air sensitive. It does react with water but not in a spectacular way.AndersHoveland - 20-11-2011 at 14:28
Methanol slowly dissolves aluminum. One would think the solution would then contain trimethoxyaluminum.
So it should just be a simple reaction, although a very slow one.

I suspect that the reaction can be made a lot faster by the addition of a small amount of a mercury salt that will form an amalgam and refluxing.
There should be lot of literature on making and handling trimethoxyaluminium, it's reactions and properties.
