You could go with an Arduino + SD card datalogger modules (these already exist, just plug and play). You can then plug whichever sensor you want in
the arduino and record the data to the SD card. Sensors such as thermocouples, voltage and current sensors are easy to find
I'm actually also interested in that kind of datalogging capability. I'd like to measure the current and voltage of a chlorate cell to know exactly
how much energy it consumes over a given run, to be able to calculate the electrical efficiency.
