do the thermometers used in ground glass setups have a joint or are the attached w/ stoppers?

Some have stoppers affixed as part of the thermometers (usually 10/30) and some thermometers are attached with the help of a septa and o-ring. Others use a torion adaptor with a compression ring. Then of course there are thermowells, which are hollow tubes with a glass joint that a thermometer or thermocouple can be inserted into. There are a number of options, they vary depending on the glassware and the thermometer you are intending to use but there is usually some way to make it work.
