Saccharomyces cerevisiae

How can I desactivate the enzyme alcohol dehydrogenase from the Saccharomyces cerevisiae (yeast) to get acetaldehyde sol?

I have read that NaHSO3 + Saccharomyces cerevisiae culture make a large amount of Glycerine, is there any other variation of the methabolism of Saccharomyces cerevisiae that can be operated?

Thanks!!!

that question is rather broad

ranitidine or Pyrazole inhibit ADH in humans.
