"platelets from water"?
Does the term, "platelets from water" mean something will crystallize from water? Or is it a term to describe a type of crystal that will from when a
substance is crystallized? Oddly, it is not a term I have come across before in relation to chemicals. Anyone have a good definition of this term?

It would be helpful if you write the context of such expression. However, it may be related to the crystallization of any substance in water as a
solvent.

I came across it as an entry in the merck catalog, under properties. It lists, "platelets from water"?

Yup - you should have compared with a few other entries. You're seeing crystal form and the solvent used, for some compounds there will be several
entries of differing crystal form and solvents.
